Wholemeal Pancakes with Cinnamon Peaches

These low fat pancakes use ingredients that are high in fibre with wholemeal flour having a lower glycemic index (GI) which is better for managing blood glucose levels. Enjoy for breakfast or as a snack that can be made either savoury or sweet with your choice of toppings. 

Serves: 2

Preparation time: 10 minutes

Difficulty: Easy

    Ingredients:

    • 1 cup Wholemeal self-raising flour
    • 1 cup skim milk
    • 1/2 tsp Canola oil
    • 1/2 tsp vanilla essence
    • 1 egg (white only)
    • 200g peach slices (canned)
    • 1/2 tsp cinnamon

    Method:

    1. Firstly beat the egg white in a bowl until firm.
    2. In a separate larger bowl add the flour, milk and oil, stir to combine. Once combined stir in the beaten egg white and sit for 5 minutes. 
    3. Place peaches (with juice) into a microwave safe bowl with the cinnamon for 2 minutes (or until warm). 
    4. Choose a crepe/fry pan and spray with minimal oil and cook each pancake. Flip over when bubbles start to appear on the pancake to cook through. 
    5. Serve the pancakes with peaches and syrup over the top. Makes 6 pancakes. 

     

    Cooking tips: cook your pancakes on low heat and flip them over in the pan when bubbles start to appear.
