Dark Chocolate Chip Muesli Cookies

This recipe uses muesli to make chocolate chip cookies. Muesli is a healthy food that is rich in fibre, a good source of energy and is rich in vitamins A, C, E and K. Additionally muesli is full of antioxidants. This recipe makes cookies that are filled with chocolate chips, so if you’re not a huge chocolate fan reduce the number of chocolate chips.

Preparation Time: 10 minutes

Cooking Time: 15 minutes

Difficulty: Easy

Ingredients:

  • ¾ cup whole wheat flour
  • ½ teaspoon baking soda
  • ½ teaspoon Kosher salt
  • 2/3 cup unsweetened applesauce
  • ¾ cup brown sugar
  • ½ teaspoon vanilla extract
  • 1 large egg
  • 1 cup rolled oats/muesli
  • ¾ cup dark chocolate chips

Method:

  1. Preheat oven to 375°F and lightly grease 2 baking trays (or line with baking paper)
  2. In a medium-sized bowl whisk the flour, baking soda and salt together. Set aside
  3. Blend the applesauce, brown sugar and vanilla extract with an electric mixer until smooth. Add egg and mix well
  4. Add flour mixture slowly to the applesauce mixture and blend well
  5. Stir in muesli and chocolate chips
  6. Roll into a ball and flatten slightly on baking trays (15 per pan)
  7. Bake for 12 minutes
  8. Remove from oven and let the cookies cool
