Crunchy Toasted Muesli

Serves 10
Preparation time: 10 minutes
Cooking time 25-30 minutes


Ingredients:

  • 2.5 cups rolled oats
  • ½ cup sunflower seeds
  • ½ cup pumpkin seeds (pepitas)
  • ¼ cup sesame seeds
  • ½ cup almonds
  • ¼ cup shredded coconut
  • ¼ cup linseeds
  • ½ cup sultanas
  • ¼ cup dried apricots, chopped

Method:

  1. Preheat oven to 160°C.
  2. In a large baking dish, bake oats for 5 minutes.
  3. Add the sunflower, pumpkin and sesame seeds and bake a further 5 minutes.
  4. Add coconut and almonds and cook a further 5-10 minutes or until toasted. Be careful not to overcook.
  5. Once the muesli is completely cool, add the linseeds and dried fruit and store in an airtight jar.
  6. Serve low-fat milk, plant milk and/or yoghurt.
