Enjoy these delicious zucchini fritters for breakfast or lunch. This recipe uses wholemeal flour which is higher in vitamins, calcium, iron and protein than white flour. Zucchini is high in antioxidants, rich in many nutrients, and contributes to healthy digestion, making these fritters perfect for those living with diabetes.

Ingredients 

  • 4 zucchinis, grated
  • 1 large lemon (zested)
  • ⅓ cup chopped mint leaves
  • 2 extra-large eggs, lightly beaten
  • 1 ½ chopped garlic cloves
  • ⅔ cup wholemeal flour
  • ⅔ cup panko breadcrumbs
  • 70g crumbled feta cheese
  • 70g rocket leaves 
  • 4 teaspoons parmesan cheese
  • 4 tbs low-fat greek yoghurt
  • Black pepper (to taste)

 

Method

  1. Mix grated zucchini, mint leaves, eggs, chopped garlic, flour, breadcrumbs and lemon zest in a bowl.
  2. Sprinkle over the crumbled feta cheese and combine.
  3. Heat 2 tbsp oil in a frying pan, then reduce heat to medium. Create patties using 2 tablespoons of the zucchini mixture and cook for 2-3 minutes on each side. 
  4. Keep cooking patties until you have used all the mixture.
  5. Allow to drain on a paper towel, and then serve on top of rocket leaves. Season with pepper, parmesan and green yoghurt. 

 

Cooking tip:

  • If you find that your patties are falling apart, increase the oil and wait until they are lightly golden before flipping.
  • When cooking fritters don’t cook on a high temperature. Preheat the pan first and then reduce to medium-low.
