Wholemeal Date Loaf

This wholemeal date loaf is the perfect snack or treat! It's fairly easy to make and full of health benefits thanks to the dates. Dates are a great source of antioxidants and are high in fibre. According to healthline, dates have are low GI and its sugars are absorbed more slowly.

Difficulty: Fairly Easy

Serves: 8

Ingredients:

  • 1 cup seeded dates
  • 2 tablespoons boiling water
  • 60g margarine
  • 2 teaspoons lemon rind
  • 2 teaspoons bicarbonate soda
  • 0.75 cups brown sugar
  • 200g low fat cottage cheese
  • 2 eggs
  • 2 cups wholemeal self-raising flour
  • 2 tablespoons wheat germ

Method:

  1. Preheat oven to 160°C/140°C fan-forced
  2. Grease 14cm x 21cm loaf pan; line base and two long sides with baking paper, extending paper 5cm above edges of the pan
  3. Combine dates, water and bicarbonate of soda in a small bowl, cover and stand 5 minutes
  4. Using an electric mixer, beat margarine, lemon rind and sugar in a small bowl until light and fluffy
  5. Add cottage cheese; beat until smooth and then add eggs, one at a time; beating until combined
  6. Stir in flour, wheat germ and date mixture; pour into pan.
  7. Bake, uncovered, about 1 hour. Stand 10 minutes; turn onto a wire rack to cool.
