This is the perfect twist on a traditional fruitcake that makes it sugar free. Why not try making it for Christmas this year. This recipe was sent in by a lovely customer who says it is delicious and great as an afternoon sweet treat.

Preheat the oven to 220℃
Chop the dates, currents and sultanas.
Soak the dates, currents, sultanas, walnuts (optional) and crushed pineapple in a cup of strong black tea overnight.
Mix in sifted wholemeal flour (1.5 cups) and 3 eggs and 125g of melted butter.
Put in pre heated oven at 220 degrees for 1.5 hours. Check at 1 hour with skewer. Reduce heat if needed.
