Mango Raspberry Yogurt Tart with Erin Dolan

Here’s a deliciously summer guilt-free dessert with this #lowsugar Mango Raspberry Yogurt Tart—a perfect treat for those with diabetes to savor the sweet flavours of summer while keeping your blood glucose in check. Enjoy the tangy blend of tropical mango and raspberries in a dessert designed with your tastebuds and well-being in mind!

12 servings - 1 slice is about 20g carbs

Crust ingredients:

200g (2 c) almond flour

70g (1/3 c) coconut oil

1/2 teaspoon cinnamon

3 tablespoons maple syrup

1 teaspoon vanilla extract

Add all crust ingredients to a food processor and blitz together until a dough forms. Press dough down lightly into a pie dish and bake for 10 min at 170C/350F. Allow to cool.

Filling ingredients:

280g (1 1/4 c) Greek plain yogurt

200g (8oz) cream cheese

3 tablespoons maple syrup

1/2 teaspoon vanilla

1 teaspoon lemon zest

80g (1/2 c) Mango chunks and

170g (1 c) raspberries

Whip together all ingredients except fruit in a food processor or hand held mixer until smooth. Pour filling into prepared crust and smooth out. Decorate with mangoes and raspberries. Refrigerate for about 1 hour or until firm.
