Ingredients:

  • 1 medium-sized cauliflower, riced
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 2 large eggs
  • 1/2 cup tomato sauce (no added sugar)
  • Fresh basil leaves
  • Cherry tomatoes, sliced

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Rice the cauliflower and microwave for 5 minutes. Let it cool.
  3. Mix the cauliflower rice with mozzarella, Parmesan, and eggs. Form a dough.
  4. Press the dough onto a parchment-lined baking sheet to form a pizza crust.
  5. Bake for 20 minutes or until golden.
  6. Remove from the oven, spread tomato sauce, add cheese, and top with basil and cherry tomatoes.
  7. Bake for an additional 10 minutes until the cheese is melted.
