A combo of 140g roasted beetroot, pickled red onions, 1 orange split into segments and handful roasted hazelnuts on top of rocket. Dress it with a citrus vinaigrette (olive oil, lemon juice, red wine vinegar, sprinkle stevia, sea salt) Optional crumbles of feta or goats cheese on top.
