Apple, Carrot and Cinnamon Porridge

Serves 2

Preparation time: 5 minutes

Cooking time: 10 minutes

 

Ingredients:

  • 1 small red apple, diced
  • 1 medium carrot, grated
  • 1 cup traditional or steel cut rolled oats
  • 1 teaspoon cinnamon
  • 1 cup low-fat milk or plant milk of your choice
  • 2 tablespoons slivered almonds (or other chopped nuts of your choice)

Method:

  1. Finely chop apple and place in saucepan with ¾ cup water and bring to the boil.
  2. Stir in oats, and return to boil, then reduce heat and add grated carrot and cinnamon. Simmer until cooked to your desired consistency, about 8-10 minutes. 
  3. Stir in milk and serve into two bowls. Top with almonds.
