Tuna and White Bean Salad

Serves 2
Preparation time: 10 minutes 


Ingredients: 

  • 400g can cannellini beans, rinsed and drained
  • 1 x 185g can tuna in springwater, drained
  • 200g natural, low-fat yoghurt 
  • 1 tablespoon each of finely chopped dill, chives and mint
  • ½ medium red capsicum, finely sliced
  • 6 cherry tomatoes, halved
  • 2 cups mixed salad leaves, to serve
  • Ground black pepper, to taste


Method:

  1. Mix herbs into yoghurt until well combined.
  2. Mix tuna, cannellini beans, capsicum and tomatoes in a large bowl.
  3. Add herbed yoghurt mixture and toss to combine.
  4. Serve on salad leaves and season with black pepper. 


Cooks tip:  to lower sodium intake, choose no-added salt cannellini beans
