Sugar Free Fruit Cake Recipe

This is the perfect twist on a traditional fruitcake that makes it sugar free. Why not try making it for Christmas this year. This recipe was sent in by a lovely customer who says it is delicious and great as an afternoon sweet treat.

Ingredients:

  • 1 cup Dates
  • 1 cup Currents
  • 1 cup Sultanas
  • 1 440gm tin of Unsweetened crushed pineapple
  • Black tea
  • 1.5 cups Wholemeal flour
  • 3 Eggs
  • 125g Butter

Method:

  1. Preheat the oven to 220℃

  2. Chop the dates, currents and sultanas.

  3. Soak the dates, currents, sultanas, walnuts (optional) and crushed pineapple in a cup of strong black tea overnight.

  4. Mix in sifted wholemeal flour (1.5 cups) and 3 eggs and 125g of melted butter.

  5. Put in pre heated oven at 220 degrees for 1.5 hours. Check at 1 hour with skewer. Reduce heat if needed.
