Low-fat Tiramisu recipe friendly or people living with diabetes

This traditional Italian dessert has a low-fat twist, making it diabetes-friendly while still possessing the classic flavours we all love. Enjoy this easy to make, lighter version of tiramisu guilt-free with friends and family.

Serves: 6

 

Ingredients:

  • 12 savoiardi (sponge finger biscuits)
  • 750g low fat ricotta
  • 1/3 cup low-fat milk
  • 1 ½ tbs instant coffee
  • 1 ½ tbs caster sugar
  • 1/2 cup milk (full cream)
  • 1/3 cup coffee-flavoured liqueur
  • Cocoa powder (to serve)

 

Method:

  1. Dissolve coffee in half a cup of boiling water. After dissolved, stir in ½ cup of full cream milk and the coffee liqueur. Set aside to slightly cool.
  2. In a separate bowl, mix the low-fat ricotta with the low-fat milk and caster sugar, and set aside. 
  3. Dip half (6) of the savoiardi biscuits into the coffee mixture one-by-one. Break each one in half and place pieces in the base of 6 serving glasses. Spoon half of the ricotta mixture evenly on top of the biscuits in each of the glasses.
  4. Dip the other half of the savoiardi biscuits in the coffee mixture and place each one on top of the ricotta in each serving glass.
  5. Divide the remaining ricotta mixture evenly between the glasses and dust the tops with cocoa powder. Serve immediately (while fresh) or cover and refrigerate until ready to serve.



Cooking tip:

  • If desired, the liqueur can be omitted from the coffee mixture - replace with a little boiling water.
