Ingredients:
- 4 white corn tortillas
- 1 cup canned black beans (rinsed and drained)
- 4 tablespoons salsa
- ½ teaspoon ground cumin
- ½ avocado, mashed
- 1 teaspoon lime juice
- Pinch of ground black pepper
- 1 cup chopped iceberg lettuce
- 1 tomato chopped
- 1 green shallot/spring onion
Method:
- Preheat oven to 390°F
- Line a small tray with baking paper and place tortillas on a baking tray
- Spray the tortillas with oil and bake for 8-10 minutes, or until crisp
- Mix the black beans, salsa and cumin in a small saucepan over a low heat until warm
- Divide the bean mixture evenly between the tortillas
- Slice green shallots, iceberg lettuce and tomato thinly
- Mix avocado, lime juice and pepper in a small bowl
- Spoon avocado mixture over the tortillas and top with lettuce, tomato and green shallot
